I knew I just had to experiment on making a new dish when Jen told me she’s getting tired of the same old recipes over and over again.
“Riso Funghi ala Arabia”
It’s basically mushroom risotto with Arabian, Mediterranean, and Indian spices. Made with brown rice, mung dal, mixed vegetables, whole and sliced button mushrooms, and a whole lot of herbs and spices.
And yes. It’s vegan.
